Kokoro Mazesoba is a mazesoba outlet founded in 2011 by Chef Takuma Ishikawa, one of the mazesoba initiators in Japan. In 2014 Kokoro Mazesoba was awarded as Best Ramen and has opened various outlets in Japan. In addition to Japan, Kokoro Mazesoba also opened branches in Bangkok, Malaga (Spain), Paris, New York and of course Jakarta. Mazesoba is a sauce less noodle with main topping 'Taiwan Mince' in the form of minced marinated soy sauce, red chili and garlic. Also added with other toppings such as green onion, dried fish powder, and raw egg yolks.
Mazesoba texture is different from ramen and udon because it is not as thin as ramen but not as thick as udon with a chewy texture. The portion served at Kokoro Mazesoba is quite large.
